These vegan mushroom meatballs are packed with umami flavor and perfect for serving with spaghetti, in sandwiches, or as a party appetizer. They’re hearty, nutritious, and easy to make!

Ingredients:
For the Meatballs:
2 cups (200 g) mushrooms, finely chopped (button, cremini, or shiitake)
1 tablespoon olive oil
1 small onion, finely diced
2 cloves garlic, minced
1/2 cup (50 g) breadcrumbs (use gluten-free if needed)
1/4 cup (30 g) rolled oats, finely ground
1/4 cup (30 g) walnuts, finely chopped (optional, for extra texture)
1 tablespoon soy sauce or tamari
1 tablespoon tomato paste
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and black pepper to taste
