Banana Pudding Cheesecake – Creamy, Dreamy & Irresistible!

2 cups (200g) vanilla wafer crumbs (or graham crackers)
¼ cup (50g) granulated sugar
6 tablespoons (85g) unsalted butter, melted

For the Cheesecake Filling:

24 oz (680g) cream cheese, softened
1 cup (200g) granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup (240ml) mashed ripe bananas (about 2 medium bananas)
½ cup (120ml) sour cream or Greek yogurt
2 tablespoons cornstarch or all-purpose flour
½ teaspoon ground cinnamon (optional, for extra warmth)

For the Topping:

1 cup (240ml) heavy whipping cream
¼ cup (30g) powdered sugar
1 teaspoon vanilla extract
Sliced bananas and vanilla wafers, for garnish
