Beef and Potato Stuffed Boats


1. Preheat your oven to 375°F (190°C).
2. Prepare the mashed potatoes:
• Boil the quartered potatoes until tender, about 20 minutes.
• Drain them and return to the pot. Mash with butter, milk, salt, and pepper until creamy. Set aside.
3. Cook the beef filling:
• Brown the ground beef in a skillet over medium-high heat. Drain any excess fat.
• Add diced onion, minced garlic, peas, and carrots. Cook until vegetables are tender, about 5 minutes.
• Pour in beef broth, Worcestershire sauce, thyme, and paprika. Simmer until slightly reduced, about 10 minutes. Season with salt and pepper.
4. Assemble the boats:
• Spoon the beef mixture into an oven-proof dish. Spread mashed potatoes over the beef.
• Sprinkle shredded cheddar cheese on top.
5. Bake:
• Bake for about 20 minutes, until the cheese is bubbly and golden brown.
6. Garnish and serve:
