1. Prepare the Panna Cotta Base
In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for 5–10 minutes to bloom.
In a saucepan, combine the heavy cream, milk, and sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture is hot (but not boiling).
Remove from heat and stir in the vanilla extract.
Add the bloomed gelatin to the hot cream mixture and whisk until the gelatin is fully dissolved.
Pour the mixture into ramekins, glasses, or molds. Let them cool to room temperature before refrigerating for at least 4–6 hours, or until set.
2. Make the Berry Sauce
In a small saucepan, combine the berries, sugar, lemon juice, and water. Heat over medium heat, stirring occasionally, until the berries soften and release their juices (about 5–7 minutes).
Mash some of the berries with a fork for a chunkier sauce or blend the mixture for a smooth consistency.
Strain the sauce through a fine mesh sieve if you prefer a seedless topping. Let it cool to room temperature.
3. Assemble and Serve
Once the panna cotta is set, top each serving with a spoonful of the berry sauce.
Garnish with fresh berries, mint leaves, or a dusting of powdered sugar if desired.
