- 2 cups sweet potatoes peeled and grated

- 3/4 cup all-purpose flour

- Oil for frying vegetable or canola
- For the Spicy Remoulade Sauce:
- 1 cup mayonnaise
- 2 tablespoons mustard Dijon or whole grain
- 1 tablespoon ketchup
- 1 tablespoon horseradish

- 1 clove garlic minced
- 1 tablespoon lemon juice
- 2 tablespoons capers chopped

- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
