Broccoli Cheddar Soup

Ingredients:

– 4 tablespoons unsalted butter
– 1 onion, diced
– 2 cloves garlic, minced
– 1/4 cup all-purpose flour
– 4 cups low-sodium chicken or vegetable broth
– 4 cups broccoli florets
– 1 cup shredded carrots
– 2 cups half-and-half or whole milk
– 2 cups shredded sharp cheddar cheese
– Salt and pepper to taste
– Optional toppings: extra shredded cheddar cheese, crumbled bacon, chopped green onions
