- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with oil.
- Soak the Breadcrumbs: In a small bowl, combine breadcrumbs and milk. Let them soak for 5 minutes.
- Prepare the Meatloaf Mixture: In a large bowl, mix together the ground beef, soaked breadcrumbs, onion, garlic, eggs, Worcestershire sauce, salt, pepper, and dried thyme. Stir until well combined. Shape the mixture into a loaf and place it in the prepared baking dish.
- Prepare the Topping: In a small bowl, mix together the ketchup, brown sugar, and Dijon mustard. Spread this mixture over the meatloaf.
- Bake the Meatloaf: Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
- Make the Mashed Potatoes: While the meatloaf is baking, place the diced potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes, or until tender. Drain the potatoes, return them to the pot, and add milk and butter. Mash until smooth, then season with salt and pepper to taste.
- Combine and Broil: Once the meatloaf is done, spread the mashed potatoes over the top. Sprinkle with grated cheddar cheese. Broil for 3-5 minutes, or until the cheese is melted and bubbly.
- Serve: Let the meatloaf sit for 10 minutes before slicing. Garnish with chopped parsley and enjoy!
