- Preheat the oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Separate the eggs: Carefully separate the egg whites from the yolks, making sure no yolks get into the whites. Place the egg whites in a clean, dry mixing bowl and the egg yolks in another bowl.
- Whip the egg whites: Using a hand mixer or stand mixer, beat the egg whites on high speed until they form stiff peaks. This will take a few minutes.
- Mix in the cream cheese and sweetener: In a separate bowl, mix together the softened cream cheese and honey or sugar until smooth. If using sugar, make sure it’s well dissolved.
- Fold in the egg yolks: Gently fold the egg yolks into the cream cheese mixture until fully incorporated.
- Combine the mixtures: Carefully fold the whipped egg whites into the cream cheese mixture, being careful not to deflate the egg whites. Mix until there are no white streaks remaining.
- Form the bread: Using a spoon, scoop the mixture onto the prepared baking sheet, forming rounds or desired shapes. Make sure to leave space between each portion as they will expand slightly during baking.
- Bake: Bake the cloud bread in the preheated oven for 25-30 minutes, or until they are golden brown and firm to the touch.
- Cool and serve: Remove the cloud bread from the oven and let them cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely. Serve as desired.
Cloud bread is best enjoyed fresh, but you can store leftovers in an airtight container at room temperature for up to a day or two. Enjoy your light and fluffy cloud bread as a low-carb alternative to traditional bread!
