Cranberry Orange Cake – A Perfectly Zesty and Fruity Treat

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) sugar (or a sugar-free alternative)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (240ml) fresh orange juice
  • ½ cup (120ml) melted coconut oil (or neutral oil)
  • 1 tablespoon orange zest (about 1 large orange)
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional, for extra depth)
  • 1 cup (120g) fresh or frozen cranberries (coarsely chopped)
  • ¼ cup (30g) chopped walnuts or pecans (optional)

For the Orange Glaze (Optional but Recommended!)

  • ½ cup (60g) powdered sugar (or powdered erythritol for sugar-free)
  • 1-2 tablespoons fresh orange juice
