Crispy crispy crispy chips in the oven, tasty and very light: here’s the trick

Ingredients for crispy crisps: 500 grams of yellow-fleshed potatoes, 1 teaspoon of extra virgin olive oil and a pinch of salt.

Clean the potatoes well, peel them and cut them into slices about 5 millimetres thick. Submerge them in cold water for a few minutes (10-15), then drain them and place them in a saucepan filled with cold water with a pinch of salt.

These operations will remove some starch from the potatoes, but also tenderize them before baking in the oven.

When the water starts to boil, remove from the heat, drain and let cool. Caution: the potatoes should not be boiled but should be lightly scalded.

Place the potatoes in a large bowl and add a teaspoon of oil, mixing well with your hands to grease all the potatoes.

To cook crispy chips, you have two options. The first is to use, if available, the air fryer. The second is to bake in the oven, at about 220-250 degrees for about 30-40 minutes. Once cooked, flip them halfway through cooking and wait until they are golden brown all over.
