Crockpot Pork Roast

  1. Spray a 6-quart slow cooker with cooking spray.
  2. Layer sliced onions evenly on the bottom.
  3. Pat pork roast dry with paper towels.
  4. Combine seasoning mix and salt; rub generously over pork.
  5. Place pork on top of the onion bed.
  6. Pour chicken broth around the roast (avoid pouring directly on top).
  7. Cover and cook:
    • HIGH for 6–7 hours
    • LOW for 9–10 hours
  8. Check for doneness—meat should shred easily with a fork.
  9. Remove roast and let rest for 10 minutes.
  10. Shred, discarding any large pieces of fat.
