¼ cup (50g) cooked bacon or sausage, crumbled
¼ cup (30g) chopped spinach or kale
½ tsp chili flakes for a spicy kick
Instructions
1. Prepare the Mushrooms
Preheat your oven to 375°F (190°C).
Clean the mushrooms with a damp cloth and remove the stems. Set the caps aside and finely chop the stems.
2. Make the Stuffing
Heat 1 tbsp olive oil in a skillet over medium heat. Add the chopped mushroom stems and minced garlic. Sauté until softened, about 3–4 minutes.
In a mixing bowl, combine the cooked mushroom stems and garlic with breadcrumbs, Parmesan cheese, cream cheese, parsley, oregano, salt, and pepper. Mix well.
If using add-ins like bacon or spinach, stir them in at this stage.
3. Stuff the Mushrooms
Lightly brush the mushroom caps with olive oil and sprinkle with salt and pepper.
Spoon the stuffing mixture into each mushroom cap, pressing gently to pack it in.
4. Bake
Arrange the stuffed mushrooms on a baking sheet lined with parchment paper or foil.
Bake for 20–25 minutes, or until the mushrooms are tender and the stuffing is golden brown.
5. Serve
Remove the mushrooms from the oven and let them cool slightly.
Garnish with additional chopped parsley or Parmesan cheese before serving.
Tips for Success
Choose Firm Mushrooms: Select mushrooms with firm caps that can hold the stuffing without collapsing.
Customize the Filling: Add shredded cheese, diced vegetables, or even cooked crab meat for variety.
Pre-Bake for Juicier Results: If your mushrooms are very juicy, bake them empty for 5 minutes before stuffing to avoid sogginess.
Serving Suggestions
Serve as an appetizer at parties or alongside a fresh green salad for a light meal.
Pair with a dipping sauce like garlic aioli or marinara for extra flavor.
Stuffed mushrooms are versatile, delicious, and sure to be a crowd-pleaser at any gathering! 🍄✨
