Instructions:
Prep: Preheat your oven to 350°F. Grease and line a 9×5-inch loaf pan.
Mix Wet Ingredients: In a large bowl, whisk together eggs, sugar, and vanilla. Add oil and milk, mix well.
Add Dry Ingredients: Stir in grated carrots. Sift in flour, baking powder, cinnamon, and nutmeg. Fold in walnuts if using.
Bake: Pour the batter into the prepared pan and bake for about 50 minutes. Let cool completely.
Icing: Cream together the cream cheese and butter, add vanilla and powdered sugar and mix until smooth. Chill if needed before spreading on the cooled cake.
