Easy Orange Zucchini Cake: Moist, Citrusy & Irresistible

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ¾ cup vegetable oil (or melted butter)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 large orange
  • ½ cup fresh orange juice
  • 1 ½ cups grated zucchini (do not drain)

For the Orange Glaze (Optional but Recommended!):

  • 1 cup powdered sugar
  • 2–3 tablespoons fresh orange juice
  • Zest of ½ an orange
