Fluffy apple pie: the secret to making it super moist and delicious!

Preheat the oven to 170C/340F. Line a 16cm round tin with baking parchment.

Beat the eggs with the sugar and vanilla until pale and fluffy.

Add the yogurt and whisk until combined.

Sift the flour separately and whisk it with the cinnamon and baking powder.

Mix the wet and dry ingredients until you have a smooth dough.

Peel and core an apple, cut it into cubes and incorporate it into the dough.

Pour in the batter and spread evenly in the pan.

Place another apple, cored and thinly sliced, on top.

Pour the melted butter over it and bake the pie for 1 hour and 30 minutes.
