Directions:
1. Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick cooking spray.
2. In a large mixing bowl, mix together flour, sugar, baking powder, baking soda, and salt.
3. In another bowl, mix buttermilk, melted butter, eggs, and vanilla extract until well combined.
4. Gently mix the wet ingredients into the dry ingredients until just combined. Don’t overmix.
5. Transfer the batter into a piping bag or Ziploc bag and pipe into the prepared donut pan, filling each cavity about 2/3 full.
6. Bake for 10-12 minutes until the donuts spring back when lightly touched.
7. While the donuts bake, prepare the custard filling. Heat milk and heavy cream in a saucepan over medium heat until steaming but not boiling.
8. In a separate bowl, whisk together egg yolks, sugar, and cornstarch until smooth and pale.
9. Gradually pour the hot milk mixture into the egg yolk mixture, whisking constantly to temper the eggs.
10. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
11. Remove from heat, stir in vanilla extract, and chill the custard in the refrigerator until cold.
12. Once the donuts are cooled, use a piping bag fitted with a narrow tip to fill each donut with the chilled custard.
13. Sprinkle granulated sugar evenly over the tops of the filled donuts.
14. Carefully caramelize the sugar topping on each donut using a kitchen torch until golden brown and crispy.
