Heavenly Moist Fruitcake – Rich, Flavorful & Perfectly Spiced

  • 1 ½ cups mixed dried fruits (raisins, cranberries, chopped dates, apricots)
  • ½ cup chopped nuts (walnuts, almonds, pecans)
  • ½ cup orange juice or rum/brandy (for soaking)

For the Cake Batter:

  • 1 cup (226g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon allspice
  • ½ cup (120ml) milk

Optional Toppings:

  • Extra dried fruit and nuts for decoration
  • ¼ cup apricot jam (for glaze)
