In a bowl, combine strawberries and 1/2 cup of sugar. Let them sit for about 20 minutes, stirring occasionally, to allow the strawberries to release their juices.
Use a blender or food processor to puree the strawberry mixture until smooth.
In a separate bowl, whisk together the heavy cream, milk, remaining 1/2 cup of sugar, and vanilla extract until the sugar is dissolved.
Stir the strawberry puree into the cream mixture.
Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches the consistency of soft serve.
Transfer the ice cream to a container and freeze until firm, at least 2 hours, before serving.
