Homemade Vegan Cucumber Sandwiches – Light, Refreshing & Delicious!

🥒 1 medium cucumber (thinly sliced)
🍞 8 slices of soft white or whole-grain bread (crusts removed, optional)
🌱 ¼ cup fresh dill or chives (finely chopped)

For the Vegan Creamy Spread:

🥑 ½ cup vegan cream cheese (or mashed avocado for a lighter option)
🍋 1 teaspoon lemon juice (adds freshness)
🧄 ½ teaspoon garlic powder
🧂 Salt & black pepper, to taste


Instructions

📌 1. Prepare the Creamy Spread

  • In a bowl, mix vegan cream cheese (or avocado), lemon juice, garlic powder, salt, and black pepper.
  • Stir well until smooth and creamy.

📌 2. Slice the Cucumber

  • Use a sharp knife or mandoline to slice the cucumber as thin as possible.
  • Lay the slices on a paper towel to remove excess moisture (this prevents soggy sandwiches).

📌 3. Assemble the Sandwiches

  • Spread a generous layer of vegan creamy spread onto each slice of bread.
  • Arrange cucumber slices in a single layer on half of the bread slices.
  • Sprinkle with fresh dill or chives for added flavor.
  • Top with another slice of bread and gently press down.
