Pecan Pie Cobbler



1. Prepare Baking Dish:
– Preheat the oven to 425°F (220°C).
– Grease a 13×9-inch (3-quart) glass baking dish with shortening or cooking spray.

2. Prepare Crust:
– Remove 1 pie crust from the box and unroll it on a work surface.
– Roll it into a 13×9-inch rectangle and place it in the prepared baking dish. Trim the edges to fit.

3. Make Filling:
– In a large bowl, stir together the corn syrup, brown sugar, melted butter, vanilla extract, and slightly beaten eggs using a wire whisk.
– Stir in the coarsely chopped pecans.

4. Layer the Cobbler:
– Spoon half of the filling into the crust-lined baking dish.
– Remove the second pie crust from the box, unroll it on a work surface, and roll it into a 13×9-inch rectangle.
– Place the crust over the filling in the dish and trim the edges to fit.
– Spray the top crust with butter-flavor cooking spray.

5. Bake:
– Bake for 14 to 16 minutes or until the crust is browned.
– Reduce the oven temperature to 350°F (175°C).
– Carefully spoon the remaining filling over the baked pastry.
– Arrange the pecan halves on top in a decorative fashion.
– Bake for an additional 30 minutes or until set.

6. Serve:
– Cool the cobbler on a cooling rack for 20 minutes.
– Serve warm with vanilla ice cream, if desired.
