Pineapple Chicken Kabobs


Prepare Skewers:
If using wooden skewers, soak them in water for 15 minutes to prevent burning.
Preheat your oven to 450°F (232°C).
Prepare Ingredients:
In a large bowl, toss the pineapple, red bell peppers, red onion, and chicken breast chunks with oil, salt, and pepper.
Assemble Kabobs:
Thread the chicken, pineapple, peppers, and onion onto the skewers. Arrange the skewers on a greased rimmed baking sheet.
Cooking:
Bake the kabobs for 20 minutes. Meanwhile, prepare the sauce by combining soy sauce, sesame oil, garlic powder, brown sugar, chili sauce, and cornstarch in a small bowl. Mix well until the cornstarch is fully dissolved.
After 20 minutes, brush the kabobs with the sauce and broil on high for 3-5 minutes or until the chicken is thoroughly cooked.
Serve:
Serve the kabobs hot, garnished with additional red pepper flakes or a sprinkle of sesame seeds if desired.
