Potato Rolls with Chicken – Soft, Fluffy & Delicious

  • 1 cup (240g) mashed potatoes (no lumps)
  • 3 ½ cups (440g) all-purpose flour
  • 1 packet (2 ¼ teaspoons) instant yeast
  • ¼ cup (50g) sugar
  • 1 teaspoon salt
  • ½ cup (120ml) warm milk (about 110°F/43°C)
  • ¼ cup (60g) unsalted butter, melted
  • 1 large egg

For the Chicken Filling:

  • 2 cups cooked, shredded chicken (rotisserie or boiled)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)
  • ½ teaspoon garlic powder
  • ¼ teaspoon cumin (optional)
  • ¼ cup (60g) cream cheese or sour cream (for creaminess)
  • ¼ cup (30g) shredded cheese (cheddar, mozzarella, or Parmesan)
  • 1 tablespoon chopped fresh parsley or green onions

For the Egg Wash:

  • 1 egg yolk + 1 tablespoon milk (for a golden crust)
