Smothered Hamburger Steak


Divide the ground chuck into 6 equal-sized patties. Season each side liberally with salt and pepper.
Melt 2 tablespoons of butter in a skillet over medium heat. Add the onion and mushrooms, cooking until browned. Remove from the skillet and set aside.
In the same skillet, add 2 more tablespoons of butter and sear the beef patties for about 3 minutes on each side, or until the internal temperature reaches 120°F. Remove patties and set aside.
Add the remaining 2 tablespoons of butter to the skillet. Stir in 1½ cups of beef broth and bring to a simmer. Whisk in the flour until smooth and cook until the gravy thickens. If necessary, thin the gravy with the remaining 1/2 cup of broth.
Return the beef patties, mushrooms, and onions to the skillet. Season with additional salt and pepper to taste. Cook until the patties reach your desired doneness.
Garnish with sliced scallions and serve.
