Strawberry Cheesecake Bites


Cut the tops of the strawberries to create a flat base. Carefully hollow out the top with a small knife or melon baller.
In a bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Transfer the cream cheese mixture into a piping bag with a star tip. Pipe the filling into each hollowed strawberry.
Dip the top of the filled strawberries into graham cracker crumbs.
Optionally, drizzle with melted chocolate.
Refrigerate for at least 30 minutes before serving to set the filling.
