Super Crispy Cheese Fries: A Delicious Snack or Side Dish

1. Prepare the Potatoes
Peel and cut the potatoes into thin, even sticks.
Soak the potato sticks in cold water for 30 minutes to remove excess starch. Drain and pat them dry with a kitchen towel.
2. Coat for Extra Crispiness
Toss the dried potato sticks in cornstarch, ensuring each stick is lightly coated.
Season with salt, garlic powder, and paprika, if desired.
3. Fry the Fries
Heat the vegetable oil in a deep pot or fryer to 350°F (175°C).
Fry the potato sticks in batches for 5–6 minutes until golden but not fully crisp. Remove and drain on paper towels.
Increase the oil temperature to 375°F (190°C) and fry the potatoes again for 2–3 minutes to achieve maximum crispiness.
Drain on paper towels and sprinkle with additional salt while hot.
4. Make the Cheese Sauce
In a medium saucepan, melt butter over medium heat. Stir in the flour to create a roux and cook for 1 minute.
Gradually whisk in the warm milk, ensuring no lumps remain. Cook until the mixture thickens slightly.
Reduce the heat to low and stir in the shredded cheese until fully melted. Add mustard powder, salt, and pepper to taste. Keep warm.
5. Assemble and Serve
Arrange the crispy fries on a serving plate or baking tray.
Pour the warm cheese sauce over the fries.
Top with optional ingredients like bacon bits, jalapeños, green onions, or sour cream for added flavor.
Serve immediately and enjoy!
