- 2 medium sweet potatoes (about 1 pound total)

Instructions
- Cook the Sweet Potatoes
- Method A (Boiling): Peel sweet potatoes, cut into chunks, and boil until fork-tender (about 15 minutes). Drain and mash.
- Method B (Microwave): Peel and dice sweet potatoes, place in a microwave-safe bowl with a splash of water. Cover and microwave in 2-minute intervals until soft. Drain any excess liquid and mash.
- Make the Dough
- In a bowl, combine the warm mashed sweet potatoes with the beaten egg, flour, salt, and pepper (plus any desired seasonings).
- Stir until you get a soft but workable dough. If it’s too sticky, add a bit more flour.
- Form the “Bombs”
- Take a small scoop of dough (about 2 tablespoons).
- Flatten it slightly in your palm.
- Place a cube of cheese in the center.
- Gently shape and seal the dough around the cheese to form a ball.
- Repeat with remaining dough and cheese.
- Cook the “Bombs”
- Pan-Frying:
- Heat a thin layer of oil in a skillet over medium heat.
- Carefully place each sweet potato “bomb” in the pan.
- Cook for 2–3 minutes per side, turning gently until golden brown all over.
- Drain on paper towels.
- Air Fryer:
- Lightly brush or spray with oil.
- Air fry at 375°F (190°C) for about 10–12 minutes, flipping halfway, until golden and crisp.
- Oven:
- Preheat to 400°F (200°C).
- Place “bombs” on a baking sheet lined with parchment.
- Lightly brush with oil or cooking spray.
- Bake for 15–20 minutes, or until golden.
- Pan-Frying:
- Serve Immediately
