Sweet Potato “Bombs”

  • 2 medium sweet potatoes (about 1 pound total)
  • 1 egg (lightly beaten)
  • ¼ cup all-purpose flour (or breadcrumbs)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper (plus other seasonings to taste, e.g., paprika, garlic powder)
  • 2–3 ounces cheese, cut into small cubes (mozzarella, cheddar, or your favorite melty cheese)
  • Oil for shallow frying (or use an air fryer or oven method)

(Feel free to add herbs like chopped parsley or chives for extra flavor.)


Instructions

  1. Cook the Sweet Potatoes
    • Method A (Boiling): Peel sweet potatoes, cut into chunks, and boil until fork-tender (about 15 minutes). Drain and mash.
    • Method B (Microwave): Peel and dice sweet potatoes, place in a microwave-safe bowl with a splash of water. Cover and microwave in 2-minute intervals until soft. Drain any excess liquid and mash.
  2. Make the Dough
    • In a bowl, combine the warm mashed sweet potatoes with the beaten egg, flour, salt, and pepper (plus any desired seasonings).
    • Stir until you get a soft but workable dough. If it’s too sticky, add a bit more flour.
  3. Form the “Bombs”
    • Take a small scoop of dough (about 2 tablespoons).
    • Flatten it slightly in your palm.
    • Place a cube of cheese in the center.
    • Gently shape and seal the dough around the cheese to form a ball.
    • Repeat with remaining dough and cheese.
  4. Cook the “Bombs”
    • Pan-Frying:
      1. Heat a thin layer of oil in a skillet over medium heat.
      2. Carefully place each sweet potato “bomb” in the pan.
      3. Cook for 2–3 minutes per side, turning gently until golden brown all over.
      4. Drain on paper towels.
    • Air Fryer:
      1. Lightly brush or spray with oil.
      2. Air fry at 375°F (190°C) for about 10–12 minutes, flipping halfway, until golden and crisp.
    • Oven:
      1. Preheat to 400°F (200°C).
      2. Place “bombs” on a baking sheet lined with parchment.
      3. Lightly brush with oil or cooking spray.
      4. Bake for 15–20 minutes, or until golden.
  5. Serve Immediately
    • Enjoy these sweet potato “bombs” hot, so the cheese center is melted.
    • Serve with your favorite dip (ranch, sour cream, spicy aioli, etc.) or eat them plain.
