Prepare the Beet
Peel the beet and grate or finely chop it into small pieces. This makes it easier to cook and infuse the milk with color and flavor.
Bring Milk to a Gentle Boil
In a small saucepan, warm the milk over medium heat. Keep an eye on it, as milk can quickly boil over.
Add the Beet
Once the milk reaches a gentle boil, carefully stir in the grated or chopped beet.
Reduce the heat to low, and let the beet simmer in the milk for about 5–7 minutes. The milk will take on a beautiful pink hue.
Sweeten
Stir in 1 tablespoon of honey (or sweetener of choice). Taste and add more if desired.
Continue to simmer for an additional 1–2 minutes, allowing flavors to meld.
Strain (Optional)
For a smoother consistency, strain the mixture through a fine mesh sieve into your mug or a heatproof container.
If you prefer extra texture and nutrients, you can skip straining entirely—just be sure to stir well before drinking.
Serve and Enjoy
Pour the beet-infused milk into a mug.
Sip it warm to relish its creamy, mildly sweet flavor.
