- Preheat the oven:
Preheat your oven to 375°F (190°C). - Season the chicken fillets:
Season the chicken fillets with salt, pepper, garlic powder, and paprika on both sides. Let them rest for a few minutes to allow the seasoning to absorb into the chicken. - Cook the chicken fillets:
In a large oven-safe skillet, heat olive oil over medium heat. Add the chicken fillets and cook for 3-4 minutes on each side until golden brown and cooked through. The internal temperature of the chicken should reach 165°F (75°C). Once cooked, remove the chicken from the skillet and set aside. - Sauté the vegetables:
In the same skillet, add the sliced onion, red bell pepper, zucchini, and cherry tomatoes. Sauté for about 5 minutes until the vegetables start to soften. Add the spinach and cook for an additional 1-2 minutes until wilted. - Combine chicken and vegetables:
Place the cooked chicken fillets back into the skillet, nestling them into the sautéed vegetables. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top of the chicken fillets. - Bake the dish:
Transfer the skillet to the preheated oven and bake for 5-7 minutes, or until the cheese is melted and bubbly. - Serve:
Once baked, remove the skillet from the oven and let it rest for a couple of minutes. Garnish with fresh herbs, if desired. Serve hot and enjoy!
