1. Make the Special Sauce:
In a small bowl, mix mayonnaise, ketchup, mustard, pickle relish, garlic powder, onion powder, and white vinegar until smooth.
Cover and refrigerate until ready to use.
2. Prepare the Patties:
Divide the ground beef into 8 small balls (about 2 oz each). Do not overwork the meat to keep it tender.
Season each ball lightly with salt and black pepper.
3. Cook the Smash Burgers:
Heat a large cast-iron skillet or griddle over medium-high heat until hot.
Place 2-3 beef balls (depending on your skillet size) onto the hot surface.
Using a heavy spatula or burger press, smash the balls flat into thin patties. Cook for 1-2 minutes until the edges are crispy and browned.
Flip the patties, place a slice of cheese on top of each, and cook for another 1-2 minutes until the cheese melts.
4. Assemble the Burgers:
Spread a generous amount of special sauce on the bottom bun.
Place one cheesy patty on the bun, followed by a second cheesy patty.
Add your desired toppings, such as lettuce, tomato, pickles, and onions.
Spread more special sauce on the top bun and place it on top.
