- In a blender, combine the chopped cucumber, lemon juice, honey (or sweetener), and 2 cups of cold water.
- Blend on high until smooth.
Step 3: Strain (Optional)
- If you prefer a smoother drink, strain the mixture through a fine mesh sieve or cheesecloth into a pitcher to remove the pulp.
- If you like a thicker texture, skip this step.
Step 4: Add Water and Chill
- Add the remaining 2 cups of cold water to the pitcher and stir well.
- Taste and adjust sweetness or tartness by adding more honey or lemon juice as needed.
- Chill the lemonade in the refrigerator for at least 30 minutes.
Step 5: Serve
- Fill glasses with ice cubes.
- Pour the chilled cucumber lemonade over the ice.
- Garnish with fresh mint leaves or a slice of cucumber and lemon for decoration.
