- 1 medium onion, peeled and quartered
- 3-4 cloves garlic, minced
- 4 large carrots, peeled and cut into large chunks
- 1 lb baby potatoes (or 4-5 large potatoes, cut into chunks)
- 1 small head of cabbage, cut into wedges
- 4 cups beef broth (or water)
- 1 teaspoon black pepper
- 1 teaspoon dried thyme (optional)
- 1 tablespoon mustard (optional, for serving)
