Title: « Sugarless, Flourless Vegan Chickpea Brownies: So Good, No One Believes I Made Them! »

  • 1 can (15 oz) chickpeas, rinsed and drained
  • ½ cup nut butter (e.g., almond, peanut, or cashew butter)
  • ⅓ cup unsweetened applesauce or mashed banana
  • ¼ cup cocoa powder (unsweetened)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt
  • 2–3 tablespoons date syrup or stevia (optional, adjust for sweetness)
  • ½ cup dark chocolate chips (vegan-friendly, no added sugar)

Instructions

  1. Preheat Oven
    • Preheat your oven to 350°F (175°C).
    • Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. Blend the Ingredients
    • In a food processor or blender, combine the chickpeas, nut butter, applesauce (or banana), cocoa powder, vanilla extract, baking powder, and salt.
    • Blend until smooth and creamy. Scrape down the sides as needed.
  3. Adjust Sweetness
    • Taste the batter. If you prefer it sweeter, add a touch of date syrup or stevia and blend again.
  4. Add Chocolate Chips
    • Stir in the dark chocolate chips with a spatula, reserving a few for sprinkling on top.
  5. Pour and Spread
    • Pour the batter into the prepared pan and spread it evenly.
    • Sprinkle the remaining chocolate chips on top for extra decadence.
  6. Bake
    • Bake for 20–25 minutes, or until the edges are set and a toothpick inserted in the center comes out mostly clean.
  7. Cool Completely
    • Allow the brownies to cool in the pan for at least 10–15 minutes, then transfer to a wire rack to cool completely.
    • Slice into squares and enjoy!

Why No Sugar or Flour?

  1. Natural Sweetness: The applesauce or banana provides natural sweetness, eliminating the need for added sugar.
  2. Protein-Rich Chickpeas: They create a moist, dense base while adding protein and fiber.
  3. Cocoa Power: The unsweetened cocoa adds a rich chocolaty flavor without extra calories.
