  • 1 teaspoon baking soda
  • ½ teaspoon salt

  • 1 can full-fat coconut milk (chilled overnight)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For Garnish:

  • Vegan dark chocolate shavings or curls
  • Fresh cherries

Instructions

Step 1: Make the Chocolate Cake

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the plant-based milk, vegetable oil, vanilla extract, and apple cider vinegar. Mix until smooth.
  4. Gradually stir in the boiling water. The batter will be thin, but that’s okay!
  5. Divide the batter evenly between the prepared pans and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 2: Prepare the Cherry Filling

  1. In a saucepan over medium heat, combine the cherries and sugar. Cook until the cherries release their juices (about 5–7 minutes).
  2. Stir in the cornstarch mixture and cook until the filling thickens. Remove from heat and stir in the vanilla extract. Let it cool completely.

Step 3: Make the Whipped Cream

  1. Scoop the solid coconut cream from the top of the chilled can into a bowl (discard the liquid or save it for smoothies).
  2. Add powdered sugar and vanilla extract, and whip with a hand mixer until fluffy. Refrigerate until ready to use.

Step 4: Assemble the Cake

  1. Place one cake layer on a serving plate. Spread a layer of cherry filling over the top.
  2. Add a layer of whipped cream over the cherries.
  3. Place the second cake layer on top and repeat with cherry filling and whipped cream.
  4. Spread whipped cream over the top and sides of the cake if desired.

Step 5: Garnish

  1. Decorate the cake with chocolate shavings, fresh cherries, or additional whipped cream.
