- 2 cups all-purpose flour (or gluten-free flour blend)
- 1 cup sugar (or coconut sugar)
- ½ cup cocoa powder (unsweetened)
- 2 teaspoons baking powder
- 1 teaspoon baking soda

- 1 cup plant-based milk (e.g., almond, soy, or oat)
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 tablespoon apple cider vinegar
- 1 cup boiling water
For the Cherry Filling:
- 2 cups fresh or frozen cherries (pitted)
- ¼ cup sugar
- 2 tablespoons cornstarch mixed with 2 tablespoons water
- 1 teaspoon vanilla extract
For the Vegan Whipped Cream:
- 1 can full-fat coconut milk (chilled overnight)
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
For Garnish:
- Vegan dark chocolate shavings or curls
- Fresh cherries
Instructions
Step 1: Make the Chocolate Cake
- Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the plant-based milk, vegetable oil, vanilla extract, and apple cider vinegar. Mix until smooth.
- Gradually stir in the boiling water. The batter will be thin, but that’s okay!
- Divide the batter evenly between the prepared pans and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Step 2: Prepare the Cherry Filling
- In a saucepan over medium heat, combine the cherries and sugar. Cook until the cherries release their juices (about 5–7 minutes).
- Stir in the cornstarch mixture and cook until the filling thickens. Remove from heat and stir in the vanilla extract. Let it cool completely.
Step 3: Make the Whipped Cream
- Scoop the solid coconut cream from the top of the chilled can into a bowl (discard the liquid or save it for smoothies).
- Add powdered sugar and vanilla extract, and whip with a hand mixer until fluffy. Refrigerate until ready to use.
Step 4: Assemble the Cake
- Place one cake layer on a serving plate. Spread a layer of cherry filling over the top.
- Add a layer of whipped cream over the cherries.
- Place the second cake layer on top and repeat with cherry filling and whipped cream.
- Spread whipped cream over the top and sides of the cake if desired.
Step 5: Garnish
- Decorate the cake with chocolate shavings, fresh cherries, or additional whipped cream.
