Introduction

Inspired by the classic Louisiana dish, this plant-based version is just as flavorful, with a delicious blend of Cajun spices, tomatoes, and bell peppers. It’s easy to make, super filling, and perfect for meal prep!


Ingredients

For the Cajun Tofu:

  • 1 block (14 oz) firm tofu, pressed and cubed
  • 1 tablespoon olive oil (or broth for oil-free)
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon cayenne pepper (adjust for spice level)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Jambalaya:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped (red, green, or yellow)
  • 1 stalk celery, diced
  • 1 teaspoon Cajun seasoning (adjust to taste)
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 can (14 oz) diced tomatoes
  • 1 ½ cups vegetable broth
  • 1 cup long-grain rice (white or brown)
  • 1 cup kidney beans or black-eyed peas, drained
  • 1 teaspoon hot sauce (optional, for extra spice)
  • ½ cup chopped green onions & fresh parsley (for garnish)
