Vegan Lentil Banana Muffins – Protein-Packed & Naturally Sweet!

🌾 1 ½ cups oat flour (or whole wheat flour)
🥄 1 teaspoon baking powder
🥄 ½ teaspoon baking soda
🧂 ½ teaspoon salt
🌿 1 teaspoon cinnamon

Wet Ingredients:

🍌 2 ripe bananas, mashed
🥣 ½ cup cooked lentils (red or green, well-drained and mashed)
🥛 ½ cup plant-based milk (almond, oat, or soy)
🍯 ¼ cup maple syrup or agave
🛢 ¼ cup unsweetened applesauce or coconut oil
🌿 1 teaspoon vanilla extract

Optional Add-Ins:

🍫 ½ cup dairy-free chocolate chips (for a sweet treat!)
🥜 ¼ cup chopped nuts (walnuts, pecans, or almonds)
🥥 ¼ cup shredded coconut


Instructions

1. Preheat & Prepare the Batter

1️⃣ Preheat your oven to 350°F (175°C).
2️⃣ Line a muffin tin with paper liners or lightly grease it.
