Ingredients:

5–6 fresh peaches, sliced (or 5 cups frozen or canned peaches, drained)
1/4 cup brown sugar (adjust based on the sweetness of the peaches)

1 tablespoon cornstarch or arrowroot powder
1 teaspoon vanilla extract
1 teaspoon cinnamon
Juice of half a lemon
For the Biscuit Topping:

2 tablespoons granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup vegan butter, chilled and cubed
3/4 cup unsweetened plant-based milk (e.g., almond, oat, or soy)
