These lentil meatballs are a hearty, flavorful, and protein-packed vegan alternative to traditional meatballs. Perfect for serving with pasta, in wraps, or on their own with a delicious sauce!

Ingredients:
For the Meatballs:
1 cup (200 g) cooked lentils (green or brown)
1/2 cup (60 g) breadcrumbs (use gluten-free if needed)
1/4 cup (30 g) ground walnuts or sunflower seeds
1 small onion, finely chopped
2 garlic cloves, minced
1 tablespoon flaxseed meal + 3 tablespoons water (flax egg)
1 teaspoon dried oregano
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
2 tablespoons fresh parsley, chopped (optional)
Salt and black pepper to taste
Olive oil for frying (optional)
For Serving (Optional):
Marinara sauce or tomato sauce
Cooked pasta, rice, or salad
