These crispy and flavorful vegan zucchini stick fritters are perfect as a snack, appetizer, or side dish. They’re easy to make, versatile, and incredibly satisfying!

Ingredients:
2 medium zucchinis, cut into thin sticks (like fries)
1/4 cup (30 g) all-purpose flour (or gluten-free flour)
1/4 cup (25 g) cornstarch or chickpea flour
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
1/4 teaspoon salt
1/3 cup (80 ml) plant-based milk (e.g., almond, soy, or oat)
1 cup (100 g) breadcrumbs or panko (use gluten-free if needed)
Olive oil or spray for baking or frying
Directions:
1. Prepare the Zucchini:
Wash and cut the zucchinis into thin sticks, resembling fries.
Lightly salt the zucchini sticks and let them sit for 10 minutes to release excess moisture. Pat them dry with a clean towel.
2. Make the Batter:
In a medium bowl, whisk together the flour, cornstarch, garlic powder, smoked paprika, black pepper, salt, and plant-based milk. The batter should be smooth and slightly thick.
3. Prepare the Coating:
