Vegan Chickpea Nuggets
These vegan chickpea nuggets are crispy, flavorful, and packed with plant-based protein. They’re a fantastic alternative to traditional chicken nuggets, perfect for snacks, meals, or party platters.
Ingredients:
For the Nuggets:
1 can (400 g) chickpeas, drained and rinsed (or 1 1/2 cups cooked chickpeas)
1/2 cup (50 g) breadcrumbs (use gluten-free if needed)
1/4 cup (30 g) oat flour (or all-purpose flour)
1 tablespoon nutritional yeast
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1 teaspoon dried oregano or thyme
Salt and pepper to taste
2 tablespoons olive oil
1–2 tablespoons plant-based milk (as needed)
For the Coating:
1/2 cup breadcrumbs or panko
2 tablespoons nutritional yeast
1/2 teaspoon smoked paprika
