Vegan Pumpkin Bars
These vegan pumpkin bars are soft, spiced, and packed with fall flavors. Perfect for dessert, a snack, or even breakfast, they’re easy to make and naturally dairy-free and egg-free.
Ingredients:

1/2 cup (120 ml) coconut oil or vegetable oil, melted
3/4 cup (150 g) brown sugar or coconut sugar
1/4 cup (60 ml) plant-based milk (e.g., almond, soy, or oat)
1 teaspoon vanilla extract
1 1/2 cups (190 g) all-purpose flour (or gluten-free flour blend)
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon salt
For the Frosting (Optional):
1/2 cup (115 g) vegan cream cheese
2 tablespoons vegan butter, softened
1 cup (120 g) powdered sugar
1/2 teaspoon vanilla extract
