For the Panna Cotta:
2 cups (500ml) heavy cream
½ cup (120ml) whole milk
⅓ cup (70g) granulated sugar
1 tsp vanilla extract or vanilla bean paste
2 ½ tsp unflavored gelatin powder
3 tbsp cold water
For the Berry Sauce:
1 ½ cups (200g) mixed fresh or frozen berries (strawberries, raspberries, blueberries, blackberries)
3 tbsp granulated sugar (adjust to taste)
1 tsp lemon juice
2 tbsp water
