2 carrots, diced
1 onion, chopped
3 cloves garlic, minced
4 cups vegetable broth
1 teaspoon smoked paprika
1/2 teaspoon cumin
Juice of 1 lemon
Olive oil for drizzling
Directions:
Sauté onion, carrots, and garlic until softened.
Add lentils, broth, smoked paprika, and cumin. Simmer for 20 minutes.
Blend half the soup for a creamy texture. Add lemon juice and stir.
Serve warm with a drizzle of olive oil.
3. Red Lentil Burgers
Ingredients:
1 cup cooked red lentils
1/2 cup breadcrumbs
1/2 cup grated carrot
1 small onion, finely chopped
1 teaspoon garlic powder
1 teaspoon smoked paprika
2 tablespoons flaxseed meal + 5 tablespoons water (flax egg)
Directions:
Mix flaxseed meal with water and let it sit for 5 minutes to thicken.
Combine all ingredients in a bowl and form patties.
Pan-fry in a little oil for 3–4 minutes per side or bake at 375°F (190°C) for 20 minutes.
Serve with vegan buns and toppings.
