1 cup red lentils, rinsed
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon turmeric
1 teaspoon garam masala
1 teaspoon ground coriander
2 cups vegetable broth
1 cup coconut milk
Fresh cilantro for garnish
Directions:
Sauté onion and garlic in olive oil until softened.
Add turmeric, garam masala, and coriander. Stir for 1 minute.
Mix in lentils, broth, and coconut milk. Simmer for 20 minutes until thickened.
Garnish with cilantro and serve with basmati rice.
5. Red Lentil Salad
Ingredients:
1 cup cooked red lentils
1 cucumber, diced
1 red bell pepper, chopped
1/4 cup fresh parsley, chopped
Juice of 1 lemon
2 tablespoons olive oil
Salt and pepper to taste
Directions:
In a large bowl, combine cooked lentils, cucumber, bell pepper, and parsley.
Toss with lemon juice, olive oil, salt, and pepper.
Serve as a light lunch or side dish.
