French Pastry Rolls with Ham and Cheese

For the Pastry:
1 sheet of puff pastry (store-bought or homemade), thawed
8 slices of ham (thinly sliced)
1 cup shredded Gruyère, Swiss, or cheddar cheese
1 egg, beaten (for egg wash)
Optional Additions:
2 tbsp Dijon mustard or cream cheese (spread)
1 tsp dried herbs (thyme, rosemary, or parsley)
Freshly cracked black pepper (to taste)
