Hawaiian Pineapple Cake – A Tropical Delight!

2 cups (250g) all-purpose flour
1 ½ cups (300g) granulated sugar
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon (optional, for warmth)
2 large eggs
1 teaspoon vanilla extract
1 (20 oz) can crushed pineapple with juice (do not drain!)
½ cup chopped walnuts or pecans (optional)
½ cup shredded coconut (optional, for extra tropical flavor)

For the Cream Cheese Frosting:

8 oz (225g) cream cheese, softened
½ cup (115g) unsalted butter, softened
2 cups (240g) powdered sugar
1 teaspoon vanilla extract
1 tablespoon pineapple juice (from the canned pineapple, optional)
