Hearty Vegetable Soup Recipe

1/2 cup pasta or rice (for a heartier soup)
1 cup chopped spinach or kale (added near the end)
Fresh parsley or basil for garnish
Instructions
1. Sauté the Aromatics:
Heat olive oil in a large pot over medium heat.
Add the onion, garlic, carrots, and celery. Sauté for 5–7 minutes until softened and fragrant.
2. Build the Base:
Stir in the diced tomatoes, vegetable broth, oregano, thyme, smoked paprika, and bay leaf.
Bring the mixture to a gentle boil.
3. Add the Vegetables:
Add the potatoes, zucchini, and green beans to the pot.
Lower the heat to a simmer, cover, and cook for 15–20 minutes, or until the vegetables are tender.
4. Add Quick-Cooking Ingredients:
Stir in the corn and peas (and pasta or rice if using).
Cook for an additional 5–10 minutes until all ingredients are heated through and pasta/rice is cooked.
5. Finish with Greens:
If adding spinach or kale, stir it in during the last 2–3 minutes of cooking.
Adjust seasoning with salt and pepper.
