Homemade Chickpea Spinach Curry – Creamy, Comforting & Flavorful!

🌿 1 teaspoon cumin
🌿 1 teaspoon ground coriander
🌿 1 teaspoon garam masala
🌿 1 teaspoon turmeric
🧂 ½ teaspoon salt & black pepper (adjust to taste)

For the Main Ingredients:

🥫 1 can (15 oz) chickpeas, drained & rinsed (or 1.5 cups cooked chickpeas)
🍅 1 can (14 oz) diced tomatoes or 2 fresh tomatoes, chopped
🥥 1 cup coconut milk (full-fat for creaminess)
🥬 2 cups fresh spinach (or 1 cup frozen spinach)
🍋 Juice of ½ lemon (for brightness)

For Garnish & Serving:

🌿 Fresh cilantro (optional, for garnish)
🍚 Cooked basmati rice, quinoa, or naan bread


Instructions

1. Sauté the Aromatics

1️⃣ Heat oil in a large pan over medium heat.
2️⃣ Add chopped onion and sauté for 3-4 minutes, until softened.
3️⃣ Stir in garlic, ginger, and chili flakes, cooking for 1 more minute until fragrant.


2. Add the Spices & Tomatoes

1️⃣ Add cumin, coriander, garam masala, turmeric, salt, and pepper, stirring for 30 seconds to toast the spices.
2️⃣ Pour in diced tomatoes, stir well, and let cook for 5 minutes, allowing the flavors to blend.


3. Add Chickpeas & Coconut Milk
