Homemade Vegan Cucumber Sandwiches – Light, Refreshing & Easy!

8 slices of bread (white, whole grain, or gluten-free)
1 large cucumber (thinly sliced) 🥒
1 teaspoon salt (to remove excess moisture from cucumbers)

For the Vegan Creamy Spread:

½ cup vegan cream cheese or hummus
1 tablespoon fresh dill (chopped, or 1 tsp dried dill) 🌿
1 teaspoon lemon juice 🍋
½ teaspoon garlic powder
Salt & black pepper to taste

💡 Optional Add-Ins: Add chopped chives, a pinch of smoked paprika, or a splash of hot sauce for extra flavor!
