Quick & Easy Vegan Lemon Mousse – Light, Creamy & Refreshing!

1 can (13.5 oz) full-fat coconut milk, chilled overnight 🥥
¼ cup fresh lemon juice (about 2 lemons) 🍋
1 tablespoon lemon zest (adds extra flavor!)
¼ cup maple syrup or agave syrup 🍯
1 teaspoon vanilla extract
½ teaspoon turmeric (for color, optional)
2 tablespoons cornstarch or arrowroot powder (for thickening, optional)

💡 Toppings (Optional): Coconut whipped cream, fresh berries, lemon zest, or crushed nuts!


Instructions

Step 1: Prepare the Coconut Cream

📌 1. Open the chilled can of coconut milk and scoop out the thick, solid part (coconut cream).
📌 2. Place in a mixing bowl and whip with a hand mixer until fluffy.

💡 Tip: Use only the thick part of the coconut milk—save the liquid for smoothies!


Step 2: Make the Lemon Mixture

📌 1. In a separate bowl, whisk together lemon juice, lemon zest, maple syrup, vanilla, and turmeric.
📌 2. If using cornstarch, dissolve it in 1 tablespoon of warm water and mix it in.
