✔ 200g (7 oz) linguine or spaghetti
✔ 2 tablespoons olive oil or vegan butter
✔ 2 cups mushrooms (sliced, any variety – cremini, shiitake, or button)
✔ 3 cloves garlic (minced)
✔ ½ teaspoon red chili flakes (optional, for spice)
✔ ½ teaspoon dried thyme or oregano
✔ ¼ cup vegetable broth or white wine (for extra flavor)
✔ Salt & black pepper to taste
✔ 2 tablespoons fresh parsley (chopped, for garnish)
✔ Vegan Parmesan (optional, for topping)
Instructions
Step 1: Cook the Linguine
📌 1. Bring a large pot of salted water to a boil.
📌 2. Cook the linguine according to package instructions until al dente.
📌 3. Drain and set aside, reserving ¼ cup of pasta water.
💡 Tip: Adding a bit of reserved pasta water later makes the sauce silkier!
